Cook the vegetables Heat a small pan over medium heat with a drizzle of olive oil. Add the carrot and celery and cook for 4-5 minutes until softened. Add the garlic and cook for a further 30 seconds until fragrant. Transfer the vegetables straight into the slow cooker. 2. Sear the beef Season the gravy beef generously with salt and pepper. Using the same pan, sear the beef over high heat until browned on all sides. 3. Into the slow cooker Add the seared beef to the slow cooker with the vegetables. Pour over the Siciliana pasta sauce, stock (or wine, if using) and sprinkle over the Italian herbs. 4. Slow cook Cover and cook on LOW for 7-8 hours (or HIGH for 4-5 hours), until the beef is very tender. 5. Shred the beef Use two forks to gently shred the beef directly in the slow cooker and stir through the sauce until thick and glossy. 6. Cook the pasta Cook the rigatoni according to packet directions. Drain. 7.
