Remove and set aside. 3. Potatoes in the pan 	•	Add 1 tbsp oil + 1 tbsp butter to the same pan. 	•	Toss in the potatoes, season with salt, pepper, and garlic (if you’re using fresh garlic, throw that in with the butter). 	•	Cook till crispy and golden (about 6–8 mins). Stir occasionally. 4. Put it all together 	•	Toss steak back in with the potatoes. 	•	Add that last tbsp of butter and sprinkle parsley on top. 	•	Let it heat together for 1–2 more mins.
