Ep 15: Vodka Pasta - 4 cloves garlic - 6oz tomato paste - 1.5 cups heavy cream - 3 tsp fresh basil - 2 tsp red pepper flakes - 1 tsp italian seasoning - 3/4 tsp black pepper - salt to taste - 3 tbsp vodka - 1/2 cup parmesean - 8 oz rigitoni - 2 tbsp butter - 1/4 cup pasta water Heat a healthy squeeze of olive oil in a pan over medium heat. Add the diced shallots and chopped garlic, cooking until fragrant.Add the tomato paste to the pan and sauté, stirring continuously, until it darkens and browns. Pour in the vodka to deglaze the pan and release the flavor compounds of the tomatoes. Pour in the heavy cream and add your seasoning, then stir everything together until the sauce is completely uniform. Add your favorite shaped, al dente noodles directly into the sauce and toss well to coat. Pour in a splash of starchy pasta water and drop in a couple pats of butter, stirring vigorously to emulsify the sauce.
