i FINALLY bought the cake bible and i'm in awe of the simplicity of the recipes. i haven't even tried any but just reading through the recipes and seeing how simple the ingredients are is just so satisfying. i love knowing that mis en place the day before won't take long because there are so few ingredients. i will let you know how they turn out!

When my kids were growing up I prepared and froze scoops of Buzzfeed's ultimate chocolate chip cookie recipe. I baked off 2 when my kids wanted an after school snack or dessert. The best inexpensive room scent I've ever known. 375 for 11-13 minutes. I did that for a decade.

I have watched many of your CCC videos 🙂 I prefer soft cake like cookies. I may have missed it if you spoke about getting that as a desired result. Have you addressed that? I will go back and listed again if I missed it. I also don't care for fudgy brownies. It seems I am not a trend follower. 🙃🙃

I’ve watched a few of the 6th st CCC videos, do I need a substitute if UK plain flour has lower protein content than American AP flour at 9% vs 11%? Also we mostly use caster sugar in baking, is the sucrose the same as UK granulated sugar or is it finer? Might be a silly question idk 🙈, I just want to prevent baking fails and sometimes struggle with American recipes with factors to consider like Celsius vs Fahrenheit, recipes using cups over grams, etc. because it’s easier to mess something up.

interesting i noticed with the ATK recipe 24 vs 48 hr it was quite different. 1 day visually better but 2 day was puffier but had more depth. 1 day

I really love your cookies! I tried this and it worked! I understand how baking can make or break the cookie. May I ask, it’s hard to get King Arthur flour in my country, would be an insane markup to just get one bag. How can I use normal APF but make it chewier? Did everything exactly as told in your recipe including the baking time. Though it was still chewy, it was harder. I prefer a softer chew, but not underbaked of course. What would you suggest? Or is there something I could have done incorrectly?

I’m still struggling to dial in the baking time and temps. I’ve been doing 340° for 8-10 min (or slight color developing) then adding a pan and dropping to 285° for additional time but struggling to figure out for how long 🤔

my small cookies [2 tbsp I believe?] usually go for 11 minutes at 350°, 14 at 335° after the freezer as it gives me good results

You may have talked about this before, but how do feel about recipes that combine the butter and sugars until incorporated and then cream together the eggs/yolks + butter and sugars? I'm not sure if this is a super popular method or if this is frowned upon! Just wanted to get your thoughts, thanks again 🩷

my recipe yields a cakey cookie at 375 for 8 minutes. extended to 10 minutes and its a perfect wrinkly crispy edge cookie.
