Inspired by Voicemails for Isabelle, even though I’ve never watched it😂 but I saw everyone else making this and it’s sooo good wow. Cornbread and chicken pot pie are 2 of my favorite things so I knew I’d love it!! Ingredients: •4 tbsp butter •1.5 cup carrots sliced •1 cup celery sliced •1 cup mushrooms diced •1/2 a large onion diced •1 tbsp thyme •1/2 tsp dried sage •1 tsp garlic salt •1 tsp pepper •1.5 tsp chicken bouillon powder •1/3 cup flour •2 cups chicken broth •1 1/3 cup heavy cream •2 chicken breasts shredded or chopped (or use a few handfuls of rotisserie chicken) •3/4 cup frozen peas Cornbread •2 packs of the jiffy corn muffin mix •2 eggs •2/3 cup milk •2/3 cups sour cream •4 tbsp melted butter •1 cup shredded cheese •jalapeños for topping (you can also put them in the cornbread mixture) Preheat your oven to 400°F. Start by cooking your chicken however you’d like (I just boiled mine) or just use rotisserie chicken. Chop up all your veggies and sauté them over medium heat with the butter. Add the seasonings and stir. Let those cook for roughly 5-10 minutes and then add the flour and stir. After about 2 minutes, add the chicken broth and stir. Once it starts simmering and thickening, add the heavy cream and stir. Once it’s bubbling stir in the shredded chicken and frozen peas. If you want it thicker, let it continue simmering. If you want it more thin, add more chicken broth or heavy cream. If you made this in an oven safe pan, you can just leave it in the pan and put the cornbread on top. Or you can transfer it to a greased 9 x 13. For the cornbread, just mix all the ingredients together (minus the cheese), then once combined, mix in the cheese. Try to not over mix. Pour and spread the cornbread mixture over the chicken pot pie mixture. Add on the sliced jalapeños. Bake for 25ish minutes. Check around the 20 minute mark to see if it’s getting too browned for your liking, if so, add some foil on top.
