LE COURCHEVEL CREPE CAKE 🇫🇷🍓✨ Inspired by the ski resort of Courchevel in the French Alps, this pâtisserie classic is the showstopper dessert you didn't know you needed. 📍SAVE this post to try it SERVES 8-10 CRÊPES 375 ml full-cream milk 3 large eggs 190 g white flour 40 g granulated sugar 40 g butter FRESH RASPBERRY COULIS 150 g caster sugar 200 ml water 125 g fresh raspberries FILLING & TOPPING 16 savoiardi biscuits 500 ml thickened cream, plus extra to serve 250 g mascarpone 60 g icing sugar, plus extra to serve 1 tsp vanilla bean paste 200 g strawberries, finely chopped 125 g fresh raspberries 2 tbsp apricot jam 🌟Whisk milk, flour, eggs and a pinch of salt until smooth. Rest for 30 minutes, then cook 5 crêpes in a lightly greased pan. Trim two to size and cool. 🌟Simmer coulis ingredients for 10 minutes, strain and cool. Whip cream, mascarpone, icing sugar and vanilla until thick and fluffy. 🌟Line a 20 cm springform tin with 3 crêpes, base and sides, letting them overhang. Spread cream in the base, dip savoiardi in the coulis and layer with chopped strawberries. Repeat twice. Seal with the final crêpe and fold the edges over.
