Jamaican curry chicken 3 lbs chicken (cut into pieces) 1/2 tbsp black pepper!!@ 1/2 tbsp garlic powder!!@ 1,/2 tbsp onion powder!!@ 1/2 tbsp adobo allpurpose seasoning!!@ 1_2 tbsp italian seasoning!!@ 1/2 tbsp mrs dash!!@ 1 tsp pepper flakes!!@ 1 packet maggi season up chicken powder seasoning .( can be found on amazon ) 1 tsp Rosemary!!@ 5 sprigs of fresh tyme!!@ 1 tsp allspice seeds!!@ 1 scotch bonnet pepper!!@ 5 stalks of scallions!!@ 6 cloves of fresh garlic minced!!@ 1tsp fresh minced ginger !!@ 2 and a half cups chicken broth!!@ 2 and a half tbsp curry powder !!@ 1/4 yellow pepper!!@ 1/4 green pepper I!!@ 1 large onion.!!@ 1 large carrots!!@ Wash chicken add to a large bowl then add all the above seasoning leaving out the peppers, onion,carrot and scotch bonnet pepper. And chicken broth . mix well set aside to marinate atleast 1 hour. (I marinate overnight ) When ready to cook heat up a large cast iron pot with 1 tbsp veg oil when its well heated add to it the 2 and a half tbsp curry to the pot for about a miniute .(dont let it burn) it Will taste bitter. Then add seasoned meat cover about 10 miniutes Stiring about every 3miniutes just so the curry burn and catch a little colour then add 2 cups chicken broth cover and continúe cooking another 10 miniutes then add carrots ,peppers and onions and scotch bonnet pepper. Continue cooking another 20 minutes on médium fire until it comes down to gravy of your contistency . Enjoy with some sticky white rice!!@
