Brown Sugar Cinnamon Peach Cake🍑✨ For the cake : 2 large eggs 1/2 c (115g) melted butter 1 tsp vanilla 1/4c (60g) sour cream / greek yogurt 3/4c (180ml) buttermilk 3/4c (150g) brown sugar 2c (240g) all purpose flour 1.5 tsp baking powder 1/2 tsp baking soda 1 tsp salt peaches: 3 pcs diced peaches 1 tsp cinnamon cinnamon swirl: 1/4c (60g) melted butter 1/4c (50g) brown sugar 2 tsp cinnamon (mix together) Icing (optional): 1/2c (65g) icing or confectioners sugar 1 tbsp milk 1/2 tsp cinnamon 1. In a bowl, whisk the sugar and eggs, then add the rest of the wet ingredients: melted butter, yogurt, buttermilk, and vanilla . Whisk until well combined. 2. Add the dry ingredients: all purpose flour, baking powder, baking soda, and salt. Gently mix until no streaks of flour remain. 3. Fold in the peaches. 4. Transfer the batter to an 8x8 inch baking pan lined with baking paper or parchment. 5. Put dollops of the cinnamon mixture on top of the cake and swirl it using a toothpick or a chopstick. 6. Bake in a preheated oven at 350F (180C) for 35-45 mins or until a toothpick inserted comes out clean. 7. Once baked, cool the cake in the pan for 10-15 mins, transfer to a cooling rack to cool completely. 8.
