The viral watermelon ice cream trend looked cool, but freezing a whole watermelon, pouring cream into it, and scraping forever? My hands were cold, my arm was tired, and honestly… no thanks. 😂 So I made it easier. Sweet frozen watermelon blended with grated pineapple, coconut milk, coconut cream, sugar, and shredded coconut. Thick, cold, creamy, and full of island flavor. 🤙🏽 Knife: Cutting board: Food processor: Ingredients: * Watermelon, cut into chunks and frozen * Fresh pineapple, grated * 1/2 cup coconut milk * 1/2 cup coconut cream * 1/2 cup sugar * Shredded coconut Instructions: 1. Cut your watermelon into pieces and freeze until solid. 2. While the watermelon freezes, grate your pineapple. 3. Mix the grated pineapple with coconut milk, coconut cream, sugar, and shredded coconut to make the ‘otai cream. 4. Add the frozen watermelon pieces to a food processor or blender. 5. Pour in the ‘otai cream 1/2 cup at a time and blend until thick, creamy, and still cold. 6. Serve right away for a soft-serve texture, or freeze a little longer if you want it firmer.
