When I want takeout but don’t have takeout money, this is what I make! Lentil Curry Ingredients 3 Tbsp Butter 1 Onion, diced 4 Cloves Garlic, minced 1 tsp Ground Ginger 1 tsp Salt ½ tsp Pepper 1 large Carrot, diced 2 Tbsp Curry Powder 1-2 tsp Cayenne Pepper, or to taste 1 cup Green Lentils, picked over, drained, and rinsed 2 cups Diced Tomatoes, or about 1 can 1 cup Water or Vegetable Broth 1 (14oz) can Coconut Milk 1. Melt butter in large pot and saute onions, garlic, ginger, salt, pepper, and carrots until tender and fragrant. 2. Add curry powder and cayenne and continue to cook for 1 minute more to bloom the spices. 3. Stir in green lentils, diced tomatoes, water or broth, and coconut milk. Bring to a boil, reduce the heat to low, cover, and cook for 30 minutes. 4. Remove the lid and continue to cook for an additional 10 minutes or until liquid is reduced.
