Quick and easy red enchiladas! Making them for the first time and they were 🔥 I usually make these with dried chilies, but this quick version saved a lot of time for me. Also let me know what chili powder to use! I actually bought the one I used in this video on accident and just decided to use it in the recipe since I had it on hand. But let me know what I should use next time!! Recipe by @Claudia she has some of the best recipes!!!! Fry tortillas in oil for a few seconds until bubbly and set aside. In a skillet melt 1tbsp butter and 2tbsp oil, then add 3tbsp flour and whisk together. Whisk in 4tbsp chili powder, 2tsp onion powder, garlic powder, cumin, Mexican oregano and salt. Then add in 1 cup of chicken broth and whisk in, and add in 2 more cups and whisk until it’s thickened, add 2 tbsp tomato paste and simmer for a few minutes. Taste for seasonings. Add a bit to a 9x13 pan Fill the tortillas with cheese and chicken if desired. Pour the remaining sauce over everything and top with more cheese. Broil until cheese is melty on top! #redenchiladarecipe #enchiladas #mexicanfood #Recipe #fyp
