🍰 My Signature No Refined Sugar New York-Style Cheesecake

Makes one 9-inch cheesecake (12 slices)
🛒 CRUST
Ingredients
• 200 g blanched almond flour
• 25 g tapioca flour
• 15 g coconut flour
• 70 g allulose + monk fruit blend
• 90 g unsalted butter, melted
• ½ tsp fine sea salt
• ¼ tsp Ceylon cinnamon
• 1 tsp vanilla bean paste (or pure vanilla extract for 0 g added sugar, unless using an unsweetened vanilla bean paste)
Instructions
1. Preheat oven to 325°F (163°C).
2. Spread the almond flour on a baking sheet and toast for 6–8 minutes, stirring once halfway through. Let cool completely.
3. Mix together the toasted almond flour, tapioca flour, coconut flour, sweetener, cinnamon, and salt.
4. Stir in the melted butter and vanilla until the mixture resembles wet sand.
5. Press firmly into the BOTTOM ONLY of a 9-inch springform pan using the bottom of a measuring cup.
6. Freeze for 10–15 minutes.
7. Bake for 18–20 minutes, or until golden brown.
8. Allow the crust to cool completely.
🍰 FILLING
Ingredients
• 907 g (4 blocks) Philadelphia Original Cream Cheese, room temperature
• 210 g allulose + monk fruit blend (add more to taste if desired)
• 227 g full-fat sour cream
• 100 g heavy cream
• 4 large eggs
• 2 egg yolks
• 12 g arrowroot starch
• 1 tbsp vanilla bean paste (or pure vanilla extract for 0 g added sugar, unless using an unsweetened vanilla bean paste)
• Seeds from 1 vanilla bean (optional)
• Zest of 1 organic lemon
• 1 tbsp fresh lemon juice
• ½ tsp fine sea salt
Instructions
1. Beat the cream cheese on LOW for 3–4 minutes, scraping the bowl often, until completely smooth.
2. Add the 210 g allulose + monk fruit blend and beat another 2 minutes.
3. Taste the batter BEFORE adding the eggs. Every allulose + monk fruit blend is different, so if you'd like it sweeter, add more allulose + monk fruit 10–20 g at a time until you're happy with the sweetness.
4. Mix in the sour cream, heavy cream, vanilla bean paste, vanilla bean seeds (if using), lemon zest, lemon juice, and salt.
5. Add the eggs ONE AT A TIME, mixing only until each disappears. Add the yolks last.
