creamy chicken chorizo rigatoni 🤤 • 1 tbsp olive oil • 1 med red onion, diced • 2 garlic cloves, minced • 100g chorizo, chopped • 500g chicken breast, diced • 1 tsp garlic powder • 1 tsp onion powder • 1 tsp chilli flakes (adjust to taste) • salt + pepper • 60g sun dried tomatoes, chopped • 2 tbsp tomato paste • 250g rigatoni • 750mL chicken stock • 100ml thickened cream • 60g grated pecorino • extra pecorino + chilli flakes to serve 1. heat olive oil in a large deep pan/pot over medium heat. add the chorizo and cook for 4–5 mins until crispy. 2. add diced chicken and season with garlic powder, onion powder, chilli flakes, salt & pepper. cook for 5–6 mins until lightly golden. 3. add onion and cook for 3–4 mins until softened, then stir through garlic + sun dried tomatoes and cook for 1 min. 4. stir in tomato paste and cook for 1–2 mins until darkened slightly, then pour in chicken stock and mix well. 5. add the rigatoni straight into the pan. bring to a boil, then simmer uncovered for 8–10 mins, stirring occasionally (so the pasta doesn’t stick), until the pasta is cooked and the sauce thickens. 6. remove from her and stir through cream + parmesan until glossy and creamy. add a splash of water or stock if needed. 7. top with extra pecorino, chilli flakes & cracked pepper and serve straight away✨ macros per serve (4 serves) calories: 667 P: 56g C: 46g F: 28g #onepanrecipe #tefal #creamypasta #pastarecipe
