BRAISED FENNEL & SALSA VERDE 💚 recipe ⬇️ #veganfyp #vegantok #FoodTok #foodfyp #beans INGREDIENTS: 3 tbsp vegan butter 3 fennel bulbs, chopped into wedges 1/2 tbsp brown sugar 350ml vegetable stock 400g can butter beans, drained & rinsed juice 1/2 lemon salt & freshly ground black pepper SALSA VERDE: 1 large garlic clove, minced 30g parsley, finely chopped 30g basil, finely chopped 15g mint, finely chopped 2 tbsp capers, finely chopped 2 tsp dijon mustard 3 tbsp red wine vinegar extra virgin olive oil METHOD: 1️⃣ Start with making the salsa verde. Combine the garlic, parsley, basil, mint, capers, dijon mustard, red wine vinegar and a big pinch of salt and black pepper in a small bowl. Add just enough olive oil to cover,, then give everything a big stir. Taste and adjust the seasoning, if needed. 2️⃣ Melt 2 tbsp butter in a large frying pan. Add the fennel and cook for 3-4 minutes each side or until slightly browned. Sprinkle over the sugar and season with salt and black pepper, then cook for a further 2-3 minutes, until the sugar starts to caramelize. Add 250ml vegetable stock, then increase the heat slightly and bring everything to a simmer. Reduce the heat to low, cover the pan with a lid and cook for 15 minutes, or until the fennel is soft all the way through. Remove the lid and continue to cook for a further 5-10 minutes, or until the liquid has reduced into a sticky glaze.  3️⃣ Meanwhile, you can make the butter bean mash. Melt the remaining vegan butter in a large saucepan and add the butter beans, remaining vegetable stock and a good pinch of salt and black pepper. Bring everything to a simmer and cook for 5-6 minutes, or until the butterbeans are nice and soft. Transfer the mixture into a food processor along with the lemon juice and blend until smooth and creamy. Taste and adjust the seasoning, if needed. 4️⃣ Spread the butter bean mash over the bottom of a serving dish. Arrange the braised fennel on top and serve drizzled with a few good spoonfuls of salsa verde.
