Yatsuhashi (八つ橋) is one of Kyoto’s most famous traditional sweets. The soft version, called nama yatsuhashi, is a chewy rice flour sweet that’s naturally gluten-free. There’s also a baked version, which is crispy and has a texture similar to a thin cookie or cracker. And the good news for vegans: many flavors are accidentally plantbased! 🤩 Currently vegan-friendly flavors I found at Nishio Yatsuhashi include: Nama yatsuhashi (soft): • Cinnamon (Nikki) • Matcha • Strawberry • Peach • Mandarin • Ramune soda • Mango • Black sesame Baked yatsuhashi (crispy): • Cinnamon (Nikki) • Matcha ❗️Not every yatsuhashi is vegan, though. For example, the banana chocolate flavor contains dairy, and some flavors that seem vegan (such as plum) may contain cochineal (コチニール色素), a red food coloring made from insects. The flavors listed above are vegan-friendly, but ingredients can vary depending on the manufacturer and Yatsuhashi brand, so it’s always worth checking the label before you buy. In Japan, there’s roughly a 50/50 chance that sugar has been refined using bone char.
