Because it’s not about rest, it’s the sacrifice. It’s pausing things so when you start them again, you know what power/effect those things had over you, and therefore you now know what to let go of. It’s the ultimate protection - better than white or black magic. But its interesting that the word rest is localized on sabbath. It’s more of a rest, I suppose, from the impact those things were having on you.
