It's tossed together in the most delicious high protein creamy chili lime dressing that just makes this dish so good 😍 Recipe 👇 Makes: 6-8 servings For the Pasta Salad - 12 oz rotini pasta (I used chickpea pasta to add protein) - 1 lb grilled chicken breast, diced - 2 ears corn, roasted - 3 green onions, thinly sliced - ½ red onion, finely diced - 1 jalapeño, finely diced - ½ cup chopped fresh cilantro - 1 cup crumbled cotija or feta cheese For the dressing: - 1 cup plain Greek yogurt - ¼ cup avocado oil mayonnaise - 1 tsp garlic powder - 1 tsp paprika - 1 tsp chili powder - ½ tsp salt - ¼ tsp black pepper - Zest and juice of 1 lime Instructions: - Cook the pasta according to the package directions. Drain, rinse under cold water, and let cool completely. - Meanwhile, grill or roast the corn cob in a hot skillet until lightly charred on all sides. Once cool enough to handle, slice the kernels off the cobs. - In a small bowl, whisk together the Greek yogurt, avocado oil mayonnaise, garlic powder, paprika, chili powder, salt, pepper, lime zest, and lime juice until smooth. - In a large mixing bowl, combine the cooled pasta, diced grilled chicken, roasted corn, green onions, red onion, jalapeño, cilantro, and crumbled cheese. - Pour the dressing over the pasta salad and toss until everything is evenly coated. - Garnish with extra cilantro, cheese, and a squeeze of fresh lime juice if desired.
