@wildhavenfarm: No peel cherry tomato salsa! Ingredients: 5 lbs cherry tomatoes, roughly chopped (no need to peel) 2 cups corn 1 cup onion, finely chopped 1/2 cup bottled lime juice 2 jalapenos, seeded and minced 1 tsp chili powder optional 1 tsp oregano 1 tsp salt 1/2 tsp cumin Directions: Add all ingredients to a pot and bring to a boil for 5-10 minutes, stirring occasionally. Ladle hot salsa into hot pint jars. Debubble. Leave 1/2 inch headspace. Clean rim of jar. Add lid and ring, fingertip tight. Add hot jars to hot water bath canner. Boil jars for 15 minutes (adjust for elevation above 1000'). Then turn off heat and remove canner lid for 5-10 minutes. Remove jars and place on towel on counter for 12-18 hours.
