Stuffing Smash Burgers with Brie, Pigs in blankets and Cranberry Mayo.  This burger was absolutely BANGIN😍  chicken stuffing smash patties, crispy pigs in blankets, melted Brie, cranberry mayo and a gravy drizzle 😮‍💨 quick, easy & perfect for the festive season.  Ingredients (serves 2):  250g chicken mince 3 pigs in blankets (or use bacon for a lower cal burger) 
25g sage & onion stuffing mix (dry)
30ml hot chicken stock
Black pepper
50g brie sliced 50g lighter mayonnaise
25g cranberry sauce
2 brioche burger buns
15g chicken gravy granules
150ml hot water
 💕In a bowl, mix the chicken mince, stuffing mix, hot stock and black pepper to a bowl. Leave to sit for 5 minutes so the stuffing hydrates. Then using damp hands, divide into four loose balls. 💕Cook the pigs in blankets according to packet instructions. Slice them in half lengthways and set aside.
 💕Mix together the mayonnaise and cranberry sauce then chill until needed.
 💕Heat a large non-stick frying pan over medium-high heat and lightly spray with oil. Add the chicken stuffing balls and smash down to form a burger pattie. Use damp baking paper or spatula to make smashing down easier. 💕Cook for 3-4 minutes until golden and crisp underneath, then flip. Top each patty with slices of brie, cover the pan with a lid and cook for a further 3-4 minutes, until the chicken is completely cooked through and the cheese has melted. Remove the lid and gently spread the softened brie over the tops of the patties. 💕Meanwhile, toast the brioche buns cut side down in the same pan until lightly golden. 💕Mix the gravy granules with the hot water until combined . 💕Build the burgers by spreading cranberry mayo over the bottom buns, layering with the chicken stuffing patties, pigs in blankets  and a light drizzle of gravy before adding the bun lid.
