Cheesy Sausage, Stuffing and Onion Loaded Potatoes 😍 Cheesy, saucy, crispy and under 500 calories, these loaded potatoes have cubed chicken sausage, slow cooked onions, crispy stuffing & broccoli for a bit of comfort food heaven on a Sunday 😮‍💨🤌🏻 ‼️ Get more low-cal, high protein recipes in my cookbook “Low-Cal Kitchen Bangers” linked in my bio💕 Ingredients (serves 2): 550g maris piper potato peeled and cubed  1 tsp garlic granules  1 tsp mixed herbs  1 red onion sliced  Salt  28g sage and onion stuffing 70ml hot water  6 chicken chipolata sausages chopped (I use Heck) can sub for reduced fat pork 100g tenderstem broccoli tips 2 heaped tbsp of gravy granules (I use beef Bisto Best to add a bit of a beefy vibe with using chicken sausages!) 50g mozzarella grated  💕Season the potatoes with the garlic granules and mixed herbs. Air fry for 20 minutes at 190 degrees, alternatively bake at 200 for 30-40 minutes. 💕Add the onions to a small pan along with the salt. Cook over medium to low heat for the time of the potatoes, stirring here and there. Add a splash of water when needed to prevent them drying out. 💕Add the stuffing to a bowl and stir through the hot water. Use a fork to fluff up and leave to one side. 💕In a large pan, cook the sausage for around 8 minutes until mostly browned. Push to one side, before adding the stuffing. Leave undisturbed for a couple of minutes before flipping to allow it crisp up. 💕Cook the broccoli according to packet instructions.  💕Make the gravy by adding 2 heaped tbsp of gravy granules to a jug. Fill with water to your desired consistency. I like it super thick so I go for around 150ml. 💕Once the potatoes are cooked, add to a bowl, with the broccoli on top. 💕Add the cooked chicken sausages before topping with the cheese. 💕Place under a hot grill for a couple of minutes until the cheese has melted. 💕Finish with the cooked onions, before crumbling over the stuffing. Drizzle over the gravy prior to serving.
