He wanted then to make the choice, so that they could prove their love and beliefs towards him. Giving people the choice, although he already knows what’s going to happen, he wants people to want him and realise on their own that they need him in their lives to save him, and not being forced.

Christians believe God gave Adam and Eve free will. The tree was part of giving them a real choice to obey God or not. God knowing what they would choose doesn’t mean He forced them to choose it. He allowed them to have the freedom to make their own decision, even though He already knew the outcome. God wanted people to choose to love and trust Him freely, not because they had no other choice.
