Just mix your dough REALLY well at the beginning (a little longer than you normally would), cover it, and go live your life. I literally go to work. 😅 When I get home, I shape it, let it cold proof, score it, and bake it. That’s it. The biggest question I get is, “How long do I bulk ferment?” The answer is… it depends on the temperature in your house. Here’s a general guide: 🌡️ 80°F → 3.5–5 hours 🌡️ 78°F → 4–5.5 hours 🌡️ 75°F → 5–7 hours 🌡️ 72°F → 6–8 hours 🌡️ 70°F → 7–9 hours 🌡️ 68°F → 8–10 hours 🌡️ 65°F → 10–12+ hours These are guidelines—not rules. Your dough doesn’t own a clock. 😉 It cares about temperature. Instead of watching the timer, watch your dough. You’re looking for: 🥖 A domed top 🫧 Bubbles around the sides ✨ A puffy, airy look 🙌 Dough that jiggles when you shake the container ⬆️ It has risen and is starting to pull away from the sides Once you start reading your dough instead of the clock, sourdough gets SO much less stressful. My bread always feels wet. Temp is 200-205 and I set a timer to let it sit for hour and a half. I sent a dm, but you probably get a lot and never saw it.

It’s so warm here that when I went to do my final stretch and folds my dough was fermented, pretty much perfectly. I had to shape it and stick it in the fridge right away, but it’s been hot here.

so I shaved mine and I'm letting it sit for 20 minutes in the bowl. which I normally wouldn't do but I thought I would because I need to eat dinner LOL after that I can pop it in the freezer for about 10 minutes or so and then do a score and put it in the oven correct?
