Guess who is home from tour and requesting tik tok meal experiments ?! Truth be told @kevinjonas spams me with food reels and parenting memes daily. So glad to be back to our winter Fridays where we have nothing better to do than random, last minute food experiments. I mean there is nothing better than cooking while your whole family heckles you along the way. 🫣🫠❤️ So this ground chicken crust pizza was actually a win! 2 out the 3 kids liked it too! Kind of has a chicken parm vibe. It was pretty simple, what we learned , use a low moisture cheese when topping, only mix in grated parm! The recipe-ish is below, its not all totally measures out but just enough to give you guidance if you want to try it ! 1lb ground chicken 1 egg 1/2 cup grated parmesan cheese garlic powder basil salt pepper 3/4 cup marinara sauce 1 cup mozzarella cheese Preheat the oven to 400 degrees In a medium size bowl add the chicken, egg, and all of the seasonings, you are going to have to sprinkle with your heart! Mix together until well combined. Place a large piece of parchment paper on the counter. Place the mixture onto the parchment paper, place another piece of parchment over top. Flatten ground chicken with a rolling pin , as of making pizza dough, do not make it super thin. Roll it out until its about 1/2 inch thick in the shape a medium size sheet pan. Transfer to a sheet pan, remove top layer of parchment and discard. Drizzle the top with olive oil and place in the oven for about 25 minutes, until the top starts to brown and the edges crisp. Remove from oven , top with sauce, cheese, and some red pepper flakes if desired. Place back in the oven for about 12-15 minutes more until the top becomes bubbly and brown.
