Yumurtalı Badadez Salatası: Cypriot-Style Egg & Potato Salad. Excerpt from Meliz’s Kitchen: “I can recall so many times where we would arrive, mob-handed with our extended family to various picnic locations, carrying tartan zipper bags loaded with makeshift storage boxes fashioned out of recycled ice-cream tubs. The tubs would be filled with meze - salads, köfte and dolma. Whole boiled potatoes and eggs, still warm, would be transported and peeled with plastic-handled knives once we arrived, then dressed with loads of olive oil, fresh coriander, mint, lemon and salt to make Yumurtalı Badadez Salatası (Egg & Potato Salad, page 64).” Serves 6-8 700g Cyprus potatoes (or Désirée, Yukon Gold, Charlotte potatoes- large waxy potatoes rather than floury ones, if possible), boiled until tender, cooled until warm, then peeled and cut into 3-4cm chunks 4 large eggs, at room temperature, boiled for 7 minutes, dunked in cold water, peeled then cut into 2-3cm chunks 2 large spring onions, finely chopped 1 tsp dried mint 50 g (1¾ oz) fresh coriander leaves and stalks, finely chopped (I LOVE mine loaded with fresh coriander but use a little less if you prefer) 4 tbsp extra virgin olive oil 4 tbsp fresh lemon juice Handful of dry black olives ¼ tsp coarse black pepper ¾ tsp sea salt flakes (adjust to taste) Notes: * If you really can’t stand coriander, you could swap for parsley, but use a little less 🌿 * If you have beautifully light and fragrant fresh spearmint or Cypriot mint then feel free to use that - garden mint in the UK is just not the same, so using a light-coloured, sweetly fragranced dried mint is the best option * Dill does not belong in a Cypriot style potato salad, so it doesn’t belong in this recipe - don’t even try to use it as a swap 🤣❌ * Leave out the eggs for a plant-based option 🥔 #melizcooks #MelizsKitchen #salad #potatoes #eggs #potatosalad #Badadez #BadadezSalatası #yumurta #patates #olives #olives #lemon #evoo #coriander #cilantro #springonions #scallions #mint #patatessalatası #Summer #summerrecipe #picnic #saladrecipes #melizcooks #fyp
