![INGREDIENTS 300g shiitake mushrooms 160ml cold sparkling water 110g gram flour 2 tortilla wraps 2 teaspoons ground cumin 2 teaspoons smoked paprika 1 sweet pointed red pepper 1 heaped tablespoon vegan red pesto Handful of grated vegan cheese Handful of flat leaf parsley Optional chopped chilli Half a shallot Olive oil drizzle Vegan butter for greasing Sea salt Black pepper METHOD 1] Whisk flour with water until smooth 2] Add spices, salt & pepper. Stir to combine 3] Grease pan & pre heat 4] Chop veg & parsley roughly into small chunks 5] Pour batter onto hot pan, followed by the veg sprinkled on top 6] Cook for 7-8 minutes per side, flipping halfway or placing into oven to cook the top 7] In the meantime, layer one tortilla with red pesto & sprinkle with cheese 8] Add omelette to tortilla (trim to shape if needed) 9] Sandwich with second tortilla & drizzle with olive oil 10] Transfer to frying pan & cook each side for 2-3 minutes until golden 11] Slice into quarters & enjoy! #veganbrunch #veganrecipes #veganeats](/video/cover/7679391568863743254.webp)
