Loaded Sweet Potatoes with Crispy Chickpeas, Apricots & Tahini
(Serves 2)
Ingredients
2 medium sweet potatoes
1 x 400g tin chickpeas, drained and rinsed
1 tbsp olive oil
1 tsp smoked paprika
½ tsp ground cumin
Salt and black pepper
1 large handful of kale
6 dried apricots, finely chopped
100g pomegranate seeds
2 tbsp pumpkin seeds
Lemon Tahini Dressing
2 heaped tbsp tahini
Juice of 1 lemon
2 tsp maple syrup or honey
2–3 tbsp warm water
Pinch of salt and black pepper
Method
Preheat the oven to 200°C fan.
Rub the sweet potatoes with a little olive oil and salt, pierce with a fork and place onto a lined baking tray. Bake for 40–50 minutes, or until soft throughout.
Meanwhile, pat the chickpeas dry and toss with the olive oil, smoked paprika, cumin, salt and black pepper. Spread onto a baking tray and roast for 20–25 minutes until crisp.
Place the kale into a bowl with a drizzle of olive oil and a pinch of salt, then massage for 1–2 minutes until softened slightly.
To make the dressing, whisk together the tahini, lemon juice, maple syrup, salt and enough warm water to loosen into a drizzle consistency.
Slice open the sweet potatoes and fluff up the centres with a fork. Top with the kale, crispy chickpeas, chopped apricots, and pomegranate seeds
Finish with the lemon tahini dressing and pumpkin seeds before serving.
Tip: In hindsight, tossing the crispy chickpeas through a spoonful of the tahini dressing would have been delish!

Hey, I think it’s also important to mention the bioavailability of iron in plants because they don’t have Heme iron which is a more bioavailable form of iron that can be found in meats (I understand for those with dietary restrictions and that iron from red meat isn’t a one size fits all solution)😁!
