French Onion Chicken🧅🍗 Juicy, tender chicken on a bed of caramelized onions, topped with golden, melted cheese. All you need is:  •6 boneless, skinless chicken thighs •3–4 large yellow onions, thinly sliced into rings •2 tbsp vegetable oil •2 tbsp butter •1 tsp salt, plus more to taste •½ tsp black pepper, plus more to taste •1 tsp smoked paprika •1 tsp sugar •150–200 g shredded cheese (Gruyère, mozzarella, or a combination) •Fresh baguette, for serving (optional) How To Make: 1. Season the chicken.     Pat the chicken thighs dry and season both sides with salt, black pepper, and smoked paprika. 2. Brown the chicken. The chicken does not need to be fully cooked at this stage. Remove the chicken from the skillet and set aside. 3. Caramelize the onions. Cook the onions over very low heat, stirring occasionally, until they become deeply golden, soft, and caramelized. This can take a long time, but slow cooking is what gives the onions their rich, sweet flavor and almost jam-like texture. 5. Assemble.     Once the onions are deeply caramelized and almost falling apart, spread them evenly over the bottom of a baking dish. Place the browned chicken thighs on top of the onions. 6. Add the cheese.     Cover the chicken generously with shredded cheese. 7. Bake.     Bake in a preheated oven at 200°C (400°F) until the chicken is cooked through and the cheese is melted and  golden on top, about 15–20 minutes. 8. Serve.
