@yume.bakery: Homemade Berry Pie from scratch. 🥧 Ingredients Pie Crust: * 560 g (4½ cups) all-purpose flour * 2 tbsp granulated sugar * 1 tsp salt * 400 g (1¾ cups) cold unsalted butter, cubed * 10–14 tbsp ice water Filling * 2 × 500 g cans (or jars) red berry compote * 40–50 g (5–6 tbsp) cornstarch * 4–6 tbsp cold water * 1 tbsp lemon juice * 1 tsp vanilla extract (optional) Egg Wash * 1 egg, beaten * 1 tbsp coarse or granulated sugar Instructions 1. Make the Pie Dough 1. In a large bowl, whisk together the flour, sugar, and salt. 2. Cut the cold butter into the flour until the mixture resembles coarse crumbs with pea-sized pieces of butter. 3. Gradually add the ice water, one tablespoon at a time, mixing just until the dough comes together. 4. Divide the dough into two discs (one slightly larger than the other), wrap in plastic wrap, and refrigerate for at least 1 hour. 2. Prepare the Filling 1. In a small bowl, whisk the cornstarch with the cold water until smooth. 2. Heat the red berry compote in a saucepan over medium heat. 3. Stir in the cornstarch mixture and cook for 1–2 minutes, stirring constantly, until thickened. 4. Stir in the lemon juice and vanilla, if using. 5. Let the filling cool completely. 3. Blind Bake the Crust 1. Preheat the oven to 200°C (400°F). 2. Roll out the larger dough disc and line your pie dish. 3. Prick the bottom with a fork. 4. Line with parchment paper and fill with pie weights, dried beans, or uncooked rice. 5. Bake for 15 minutes. 6. Remove the parchment and weights, then bake for another 5–8 minutes, until the crust is lightly golden. 7. Let the crust cool. 4. Assemble the Pie 1. Spoon the cooled berry filling into the cooled crust. 2. Roll out the remaining dough and place it over the pie, or cut it into strips to make a lattice top. 3. Trim and crimp the edges. 4. Brush the top with beaten egg and sprinkle with sugar, if desired. 5. Bake Bake at 180°C (350°F) for 25–30 minutes, or until the crust is deep golden brown and the filling is bubbling around the edges. 6. Cool Allow the pie to cool for at least 4 hours, preferably overnight, before slicing. This helps the filling set properly.
