These are my top tips to make your next cookout a breeze! 1. When cooking rib-eyes, tie them with butcher’s twine to hold the cut together and make sure it cooks evenly. Rib-eyes tend to have the cap separate which can overcook the most flavorful part of the cut! 2. Reverse sear the fattier cuts of beef! With cuts like rib-eye, you want to make sure you let that fat warm up and start to render. Using the reverse sear method helps control the cook for a perfect end result while giving the fat a head start when it comes to rendering down so it’s as delicious as can be! 3. Cook leaner cuts like filets hot and fast, just make sure you do not overcook them. I never grill without a meat thermometer, and recommend you keep one handy! When you cook hot and fast, you want to make sure you develop a good sear on the outside by flipping every 30 seconds or so, then you want to move the beef off to the cooler side of the grill to cook indirectly until they reach the desired temp! 4. Making the perfect smashburger only requires a few things, quality beef, a very hot griddle or cast iron pan, and about 2 minutes of cook time total! Form the beef into 4oz balls while the griddle heats up, then place them down and smash each ball into the griddle. Season and cook for 90 seconds before flipping. Top with American cheese and let that melt before stacking them up to serve! 5. Prepare your sides ahead of time! The last thing you want is for the meat to get cold while you wait on the sides! I usually toss my corn on the grill while I’m searing my steaks, and the rest of the sides I make earlier in the day or even the night before.
