I know it would be more effort and harder, but why not make an elevated platform for the vines, and an adjustable platform for the pumpkin itself to grow. That way the vines aren't (as) impacted by the shift as its grown. Obviously since they're smaller the platform could only be so big and hold so much weight, but the platform could also be made of some translucent material that you could check for rot with if you left a small space for the blossom to peek through the sand.

I dont have a solution for the second problem, but my brain exploded at the theory of engineering an (adjustable??) ramp garden bed so the vine can stay rooted. (Not a complete idea just a passing thought)
