Cold weather comfort Finnish Soup 🍲  Lohikeitto Ingredients: * 600g fresh salmon fillet, skin removed, cubed * 4-5 medium potatoes, peeled and cubed * 1 large onion, 1 carrot, 2 bay leaves, 5 peppercorn, and large salmon head for fish broth, about 2 L water. Soup can be made with store bought broth instead but homemade is better 😉 * 2 leeks, white part only, sliced ( can be 3 depending on size) * 1-2 carrots, sliced * 200ml heavy cream * Bunch of fresh dill, chopped * 50g butter or olive oil to sear vegetables. * Salt and white pepper to taste Instructions: 1. Prepare fish stock by simmering fish head and bones, whole onion, carrots, celery (i didn’t have one), bay leaves, peppercorns and salt. Simmer for 45 min avoid boiling. 2. Prepare the Vegetables: In a large pot, add the sliced leek, and carrots. Sauté for a few minutes until the onions are translucent. 3. Cook the Potatoes: Add the cubed potatoes to the pot and sauté for a couple of minutes. Then pour in the stock. Bring to a boil, then reduce heat and simmer until the potatoes are almost cooked through. 	3.	Add the Salmon: Place the salmon cubes into the pot. Let them cook for about 5-7 minutes, or until they are just cooked through. Be careful not to overcook the salmon. 	4. Pour in the heavy cream and bring the soup back to a gentle simmer. 	5.	Add Dill: Finally, add the chopped dill and stir it into the soup. Turn off the heat. 	6.	Serve: Serve the soup hot, with a sprinkle of fresh dill on top and a side of crusty bread. My personal love is to squeeze a lemon wedge to the bowl. Enjoy your Finnish Salmon Soup!
