@brightmomentco: a new summer staple: peach habanero tuna melts ✨ with @Wild Planet Foods wild skipjack tuna for all those omega 3s and lean proteins to keep us glowing this summer! sourdough sandwich bread recipe on my blog at abrightmoment.com :) FULL RECIPE BELOW   Peach Habanero Tuna Melt (Without Mayo) Servings: 3 to 4   Softened butter, for cooking 2 cans Wild Planet Foods Wild Skipjack Tuna, liquids drained 2 ripe peaches, chopped Juice of 1 lemon 1 tablespoon honey ½ cup yogurt 1/4th red onion, finely chopped 2 celery stalks, finely chopped 2 tablespoons basil chopped 1 tablespoon habanero hot sauce, or to taste 6 to 8 slices of sourdough sandwich bread 2 heirloom tomatoes, sliced 3 to 4 slices spicy cheddar, or regular cheddar Salt and black pepper   In a saucepan over medium high heat, combine the chopped peaches, lemon juice, and honey. Once the lemon juice begins boiling, reduce heat to LOW and cover to simmer for 5 minutes, until very juicy and tender. In a large bowl, finely mash the canned tuna with a fork. Add the peaches, yogurt, finely chopped red onion, celery, basil, and habanero hot sauce. Mix until very well combined, then season with salt and black pepper to taste. Butter the outside of your sourdough slices. Add 1 to 2 slices of tomato on the bottom inside slice, season with salt and black pepper, followed by a generous serving of the tuna salad and a slice of cheddar. Sandwich with the top sourdough slice. Add to a griddle heated over medium heat. Cook low and slow for about 5 to 10 minutes, until golden and crispy.
