I don’t think meat itself is good to be eating but I would intentionally “age” it or fermenting it raw for 4weeks-6months in a jar in a fridge thats ben unplugged

As a raw meat eater, I still think raw meat is harder to chew than cooked meat unless you cut it. Cooking meats burn some of the muscle fiber off softening it. Also those examples you provided were cut meat so obviously it’s easier to eat when you cut the muscle fibers.
