there are several peppers in Latin cuisine that change names when they go from "off the vine" to "dried, or smoked". I've only noticed it in Latin cuisine, but I would suspect that there are other regions that do it too

sorry, but Chipotle is specific to a dried, smoked jalapeño. Just dried and it it's only a dried jalapeño. If you are going to stake out the high ground at least be open to updates.
