🫐 Blueberry Crumble Muffins 🧈 Soft, fluffy blueberry muffins with tall bakery-style domes and a buttery, crunchy streusel topping! Makes 6 jumbo muffins or 10–12 regular muffins Streusel • ¾ cup (95 g) all-purpose flour • ½ cup (100 g) brown sugar • ½ tsp cinnamon • Pinch of kosher salt • 6 tbsp (85 g) cold unsalted butter, cubed Rub the butter into the dry ingredients until you have fine crumbs and larger clumps. Refrigerate while preparing the batter. Muffins • 2 cups (250 g) all-purpose flour • 2 tsp baking powder • ¼ tsp baking soda • ½ tsp kosher salt • ½ cup (113 g) unsalted butter, melted • 2 tbsp neutral oil • ¾ cup (150 g) sugar • 2 eggs • 1 tsp vanilla • ½ cup (120 g) Greek yogurt or sour cream • 2 tbsp milk • Zest of 1 lemon (optional) • 1½ cups (225 g) blueberries • 1 tbsp flour (for coating blueberries) • Coarse sugar (optional) Preheat oven to 425°F (220°C). Whisk together the dry ingredients. In another bowl, whisk together the butter, oil, sugar, eggs, vanilla, yogurt and milk. Fold in the dry ingredients until just combined. Toss the blueberries with 1 tbsp flour and gently fold into the batter. Rest 15 minutes. Fill muffin cups 85–90% full. Top generously with streusel, gently press a few extra blueberries into the top and sprinkle with coarse sugar if using. Jumbo: Bake 8 min at 425°F (220°C), then 18–22 min at 350°F (175°C) without opening the oven. Regular: Bake 5–7 min at 425°F (220°C), then 13–16 min at 350°F (175°C). Cool in the pan 10 minutes, then on a wire rack. ✨ What is streusel? Streusel is flour, sugar and cold butter rubbed into crumbs. As it bakes, it creates the crunchy topping found on bakery muffins, coffee cakes and crumb cakes. Tips • Toss blueberries in flour to help prevent sinking. • Don’t overmix! a few lumps make a softer muffin. • A hot oven creates that beautiful bakery-style dome. Enjoy! 🫐🍋 #BlueberryMuffins #BakingTips #HomeBaking #MuffinRecipe #BakeFromScratch
