Who said you can’t have your cake and drink it too?! The best way to celebrate Valentine’s Day this weekend is with the perfectly sweet Pink Velvet Mocha from @Dutch Bros Coffee and my homemade Pink Velvet Cupcakes to match!   Here’s my cupcake recipe:   *Makes ~12 cupcakes*   For the Cupcakes: - 1 1/4 cup all-purpose flour (157g) - 1 tbsp cornstarch (8g) - 1 cup granulated sugar (210g) - 1/2 tsp baking soda (3g) - 1/4 tsp baking powder (1g) - 1/2 tsp salt (3g) - 1 1/2 tbsp cocoa powder (12g) - 1/4 cup strong hot coffee (60mL) - 4 tbsp unsalted melted butter (57g) - 1/2 cup room temperature buttermilk (120mL) - 1/2 tbsp distilled white vinegar (7g) - 1/4 cup vegetable oil (60mL) - 1 large room temperature egg - vanilla extract to taste - pink gel food coloring   For the Frosting: - 1 cup unsalted room temperature butter (226g) - 5oz softened cream cheese (142g) - ~2 ½ cups powdered sugar (285g) - tiny pinch of salt - vanilla extract to taste   Instructions: *As always, follow the metric measurements when baking for the best results!   - Preheat your oven to 350F and line a cupcake tin with liners. Set aside - In a large mixing bowl, whisk together the dry ingredients - In a separate mixing bowl, combine the wet ingredients. Add the wet to the dry and mix until just combined - Pour the cupcake batter into your prepared pan and bake on the center rack at 350F for 15-18 minutes or until a wooden toothpick inserted into the center comes out with just a couple of crumbs on it (baking time will vary depending on your oven) - Allow them to completely cool before baking - Using a stand mixer w/ a paddle attachment (or a hand mixer) cream together the butter and cream cheese for the frosting until smooth (~3-5 mins on medium speed) - Add a tiny pinch of salt and a splash of vanilla extract. Mix to combine - Add the powdered sugar and mix until combined, scraping the bowl as needed. - Add the frosting on top of your fully cooled cupcakes and enjoy!   #dutchbrospartner #pinkvelvet #ValentinesDay
