@cookingwithrocco: 🐔 Grilling Series S3 Ep. 9: Grilled Chicken Cutlets | I was craving chicken cutlets last week and @giovannisiracusaa inspired me to throw them on the grill. This honestly might be my new favorite way to eat cutlets in the summer. This recipe is one of the easiest ways you’ll make chicken cutlets. No frying so no oil splatter, no eggs, and no flour. Just marinate the chicken, bread them, and throw them on the grill. 🐔 Chicken Marinade 1lb chicken breast, sliced thin 1/3 cup EVOO 2 tbsp white wine (optional) Juice and zest from 1/2 lemon 2 garlic cloves, grated 1 tbsp parsley 1 tbsp dried oregano 1 tbsp dried basil 1/4 tsp red pepper flakes Salt & pepper 🥖 Breadcrumbs 1/2 cup panko 1/2 cup seasoned Italian breadcrumbs 1/4 cup pecorino Add all the chicken marinade ingredients to a large bowl, and whisk until fully combined. Add the chicken and toss until the chicken is fully coated. Then marinate for 30 minutes, or up to 2 hours. Mix the panko, seasoned breadcrumbs, and pecorino together. Then bread each cutlet until both sides are fully coated. Heat a grill over medium high heat, spray the cutlets with olive oil spray, and grill for 4-5 minutes per side or until charred, crispy, and internal temp reaches 165° Plate and finish with fresh parsley and a squeeze of lemon juice.
