Traditional Millet Rotla
Ingredients
* 1 cup millet flour
* Salt to taste
* Water, as needed
* Ghee, for serving
Method
1. In a mixing bowl, combine the millet flour and salt.
2. Gradually add water in small portions, kneading after each addition. Repeat this process 7–8 times until the dough becomes smooth, soft, and elastic.
3. Divide the dough into equal portions and shape into balls.
4. Dust the surface lightly with millet flour and gently pat or flatten each dough ball with your hands into a thick, even rotla.
5. Place the rotla on a hot tawa (griddle). Once the top begins to dry, lightly spread a little water over the surface to remove any dry flour and create an even texture.
6. Flip the rotla and cook the other side until light brown spots appear.
7. Transfer it directly over the flame to puff up, or continue cooking on the tawa while gently pressing with a cloth or spatula until fully cooked.
8. Remove from the heat, gently separate the top layer if desired, and generously spread ghee inside.
Serving Suggestion
Serve the hot millet rotla with homemade butter, chili pickle, turai (ridge gourd) sabzi, yogurt, and a drizzle of raw peanut oil for a traditional and wholesome meal.
