ALMOND CROISSANT BAKED OATS 🥐☕️ I needed a way to use up my leftover frangipane, and this recipe did not disappoint! This is an absolutely delicious breakfast that is also high in fiber, protein, and healthy fats to give you the energy you need to kickstart your morning 🤸‍♀️☀️ and dare I say it tastes pretty similar to an actual almond croissant… 👀 Save this recipe for later and let me know what you think! 🤎 Yield: 4-6 servings 🌱Ingredients For the oats: - 2 mashed bananas - 1 cup oats (100g) - 1 cup oat flour (100g) - 1 tbsp ground flaxseed - 1 tsp baking powder - 3 tbsp maple syrup - 1 cup milk of choice - 2-3 tbsp almond butter  - Optional: 1 scoop protein powder (I recommend using a plain protein powder or vanilla. If using vanilla, you may need to reduce the maple syrup depending on its sweetness) For the frangipane: - 1/2 cup almond flour  - 3.5 tbsp sugar - 2 tbsp plant or regular butter, melted - 1/4-1/2 tsp almond extract (depending on how strong of almond flavor you want) Toppings: - sliced almonds - icing sugar 🌱Directions 1. Preheat your oven to 350°F (175°C). 2. In an 8×8-inch pan, mash the bananas until smooth. 3. Add the oats, oat flour, flaxseed, baking powder, maple syrup, and milk. Mix until well combined. 4. Drizzle the almond butter on top and swirl it into the oat mixture. 5. Bake for 30–35 minutes, or until cooked through and the top begins to crack slightly. 6. While the oats are baking, prepare the frangipane by mixing the almond flour, sugar, butter, and almond extract until smooth. Start with ¼ teaspoon of almond extract, then taste and adjust to avoid overpowering the flavour. 7. Once the oats are done baking, spread the frangipane evenly over the top. 8. Sprinkle with sliced almonds, then dust lightly with icing sugar using a sieve. 9.
