I've always thought that Alastor wasn't taking the fight seriously in this scene. He didn't have an angelic weapon, wasn't using his powers to their full extent, and seemed like he was playing around more than anything else.

I still believe Alastor could have won that fight if he took it seriously. He was just weaving Adam's attacks and mocking Adam. I know Adam has more raw power and experience. But if Alastor fought with effort, he would have killed Adam, especially since we know he had plenty of access to angelic blades with his shadow powers.
