Happy #FungusFriday! It’s time to play the winter edition of “What’s under that shrump?” Due to the way mushrooms grow up from the ground, they are often buried under mushroom humps known affectionately as “shrumps”. Sometimes they are large obvious prodrudences sticking from the forest floor. Other times they are such subtle disturbances that they can be easily missed. In this video I show you a couple of recent shrumps I have spotted and what was under them. Disclaimer: not all of this was in Mendocino (also featuring mushrooms from Sonoma, Napa, and the Sierra Foothills).  . In order or appearance we have #Russulabrevipes which is a bit acrid when cooked straight up, but after a couple round of boiling it is a blank canvas for flavors. I am especially fond of turning it into a hummus (recipe inspired by chef Chad Hyatt). #Cantharelluscalifornicus is having a banner year, developing into huge beautiful gold growths hidden under oak duff. I only found one small #Sparassisradicata but this is a top tier delicious edible mushroom with incredible texture. #Clitocybenuda is fruiting like crazy right now with all the rain, it smells like frozen orange juice concentrate, had white spores, and is pretty good in a cream sauce. #Lactariusalnicola is acrid, spicy, and gross. I haven’t found a way to make this mushroom worth eating yet, thus I labeled it inedible.
