@wolfalexanderl: Spanish 🇪🇸 crema Catalana Ingredients • 1L whole milk • 6 egg yolks • 180g sugar (+ extra for caramelising) • 40g cornstarch • Peel of 1 lemon • 1 cinnamon stick Method 1. Heat the milk with the lemon peel and cinnamon until just below boiling. Let infuse for 10–15 minutes. 2. Whisk the egg yolks with the sugar. Mix the cornstarch with a splash of cold milk and whisk it into the yolks. 3. Remove the lemon peel and cinnamon, then slowly whisk the warm milk into the egg mixture. 4. Return to the pan and cook over low heat, stirring constantly until thickened. Do not boil. 5. Pour into ramekins and chill for at least 4 hours. 6. Top with sugar and caramelise with a kitchen torch until golden and crisp. Enjoy!
