Omega level mutants are classified as mutants whose power potential is always increasing. Their limit is unknown (even though some comics show omega level mutants reaching their peak) therefore Gambit would still be considered Omega level, his potential is (technically) infinite, but he himself placed a limiter, removing his qualification for omega level. So nobody is wrong in their answer on whether he is or isn’t omega level.
