Not to mention the fact that her n=1 data set is riddled with confounders like the fact she’s very lean and keeps fit by doing an active job. Can easily make the inference her health is in spite of her diet as opposed to because of it.

Usually, heart surgeons retire at 65, because for safety reasons, they are considered too old to perform such complex and dangerous operations. IIRC, it's even mandatory to retire at 65.
