@dish_by_david: This asparagus is about to do what two different gut supplements do, but better. Asparagus is naturally rich in fructans, the fiber your gut bacteria feed on. That's the prebiotic. Ferment it in a salt brine and it picks up live cultures. That's the probiotic. One jar, both sides. Crisp, sour, garlicky, and no supplement cabinet required. Recipe in the comments, free. Better how: a whole food gives you the fiber and the cultures together, in a form your body uses, plus everything else in the asparagus. Supplements isolate one piece and charge twice. I'd rather eat the thing.
Probiotics are the good bacteria, prebiotics are the fiber that feeds them. Both in one food is a synbiotic. This is one.
Use firm spears with tight tips, pencil width ferments best. Very thin go soft, very thick stay tough.
RECIPE: trim the ends, pack upright in a jar with garlic, cover with a 2% salt brine until submerged. Airlock on, ferment about a week, keep it under the brine, then fridge. A bay or grape leaf keeps them crisp.
