@itsmesaramartinez: Cooking is all fun and games until you have children 🙃 That’s why I started this series — Dumb Dinners, where I only make the kind of quick, easy dinners that actually feed a whole family and that everybody will actually eat. Today: Giant Street Corn Chicken Quesadilla 🌽🧀 WHAT YOU NEED 3 cups rotisserie chicken, pulled 1 can fire-roasted corn, drained really well 1 can diced green chiles, drained really well 8 oz whipped cream cheese 4 cups shredded Mexican blend cheese, divided 1½ Tbsp taco seasoning ¾ tsp garlic powder Juice of ½ lime 10 burrito-size flour tortillas Olive oil spray, for the pan 2 Tbsp melted butter, for the top To finish: Mexican crema, cotija, Tajín, lime wedges HOW TO MAKE IT Heat oven to 425 with a rack in the middle. Spray a sheet pan. Mix the chicken, corn, green chiles, cream cheese, 2 cups of the shredded cheese, taco seasoning, garlic powder, and lime juice in one big bowl. Lay 6 tortillas around the edge of the pan so half of each hangs over the rim, then 2 in the center to cover the bottom, overlapping so there are no gaps. Spread the filling evenly, stopping ½ inch from the edge. Sprinkle the remaining 2 cups of cheese on top. Lay 2 tortillas in the center, fold the overhanging tortillas in toward the middle, press down firmly, and brush the top with melted butter. Set a second sheet pan on top and bake 22 to 24 minutes, taking the top pan off for the last 4 to 6 minutes. Rest 5 minutes, then cut into squares with a pizza cutter. Drizzle with crema and finish with cotija, Tajín, and a squeeze of lime. #creatorsearchinsights #HomeCooking #familydinner #easydinner #easymeal
