My guess is your hair is naturally that curly all the time, but you're straightening it out by brushing it. The humidity is probably just resetting it.

I didn't have curly hair until my 20s and now it is lovely ringlets. My recommendation it to treat it like curls for a few days and see what happens. No need to go all out or get products. Just bush it while it is sopping wet using a wide tooth comb (or you fingers) and then scrunch it with a paper towel or tee shirt. now let it dry and don't touch it and definitely don't brush it.
