10/10 no notes 🍝 Here’s what you need: ½ large onion finely chopped 4 cloves of fresh garlic minced 2 tbsp of olive oil (for the pan) Salt and pepper to taste 15 oz can of tomato sauce (always look for no more than 3 ingredients) 15 oz can of diced tomatoes 4 tbsp of good vodka 2 tbsp of butter 2 tbsp of tomato paste 1 cup of heavy cream ¼ cup of freshly grated parmesan cheese 1. Heat a large frying pan to medium-low heat. Add in olive oil, butter, garlic, and onion. Sweat the onions and garlic for about 5-7 minutes until translucent. 2. Add in tomato paste and vodka. Stir. Let simmer for 15 minutes to burn off the alcohol. Add a pinch of salt, pepper, and red pepper flakes. 3. In a large pot (in this case I used a dutch oven), oil the pot and heat to medium heat. Add in your onion mixture, tomato sauce and diced tomatoes. Cover and let simmer for 1 hour. Stir occasionally to prevent burning. 4. Add in your heavy cream and shredded parmesan cheese.
