Being in school for livestock production as someone who doesn’t come from a heavy beef background has taught me a lot. People prefer black because the black color gene is linked to genetics that make the meat more tender, but in the production industry overall soundness and maternal instinct/calf size really need to be more important than just breeding for tenderness. If you really research the bulls you put on and your replacements you can breed the same quality and still have feet and brains on them.
