🇵🇭 “Bisteak” Tagalog 🥩 My take on bistek tagalog a beloved filipino dish made of soy calamansi marinated beef! Highly reccomend this charcoa grilled version 👌 INGREDIENTS: - Steak Marinade:  - NY strip steak - 8 cloves garlic - Pepper to taste - 1/2 cup calamansi juice (optional: leave calamansi peels in the marinade) - 3/4 cup soy sauce - 2 tbsp Oyster sauce  Sauce: - strain the rest of your marinade after the steak is removed.  - add cornstarch slurry to thicken Shoestring fries - 3 potatoes, julienned - Old bay seasoning - Oil for frying  Toppings: - Sauteed red onions  - Garlic rice Instructions:  - Marinate your steak in calamansi juice (you may include the peels), soy sauce, oyster sauce, pepper and garlic for at least 30 minutes.  - Sear each side for around on high heat in oil, butter, and garlic and baste it until the internal temp reaches 130 F (For medium rare steak, but cook til desired doneness). Let it rest for 5 mins before slicing. - Strain the rest of your marinade back into the pan (removing any bits). Add your cornstarch slurry to thicken your sauce. You can add more water or even a bit of sugar to balance out the sourness/saltiness. Set sauce aside. - Slice your red onion into rings and saute in oil until partially cooked. Remove from heat and set aside. - Using a mandolin, slice potato into extra thin strips. Soak in cold water to remove excess starch. Deep fry in oil until golden brown and season and toss with old bay seasoning. - Plate your bisteak with garlic rice, top with your sauce, red onions and pair it with your shoestring.
